Cafe Gandolfi’s recipe for Stornoway black pudding with mushrooms on pancake

Cafe Gandolfi is a beguiling, integral part of the Merchant City and one of our favourite restaurants in the city. Their relationship with Scottish produce is one of the founding pillars of their success. The chefs at Gandolfi do creative things with Stornoway black pudding every day.

Below, we share one of their most popular recipes.

Stornoway black pudding with mushrooms on pancake

Serves 8

Ingredients:

Stornoway black pudding, 2 slices per person, we recommend MacLeod and Macleod.
200g button mushrooms
2 gloves garlic
1 onion
Olive oil
White wine
1 tablespoon sherry vinegar
Salt and pepper

Pancakes:

200g self-raising flour
2 eggs, beaten
1 dessert spoon golden syrup
Sugar
140ml milk
50g melted butter

Method:

Preheat oven to 190 degrees centigrade.
First sauté a finely chopped onion in olive oil until transparent.
Slice the mushrooms, add in with the onion and cook for 5-7 minutes. Add half a glass of white wine and the sherry vinegar and allow to cook for a further 5-7 minutes to get all the flavours working, season and taste.

For the pancakes, sieve the flour with a good pinch of salt. Add the eggs, and the eggs and the rest of the ingredients, beating until a smooth consistency is achieved.
Heat a non-stick frying pan over a low to medium heat. Once hot, start to make your pancakes, keeping them fresh in a warm dishtowel.

Cut 2 slices black pudding per person and cook in the oven for 10 minutes, turning after 5 minutes.

Place 2 pancakes on a warm plate, top with black pudding and a heaped tablespoon of the mushrooms.
