El Santo, a restaurant and bar on Miller Street will open at the start of December with a menu that takes a gastronomic tour of Latin America. It’s a venue in two parts, with a hidden Margarita speakeasy bar stocked with tequila and mezcal sitting alongside a separate open dining room.
Expect innovative and surprising dishes, small and sharing plates of meat and fish that have been cooked over a barbeque charcoal grill, a selection of tacos and ceviches.
You will find them above Thundercat Diner as the latest additon to a city centre cluster of food and drink names on Miller Street including The Spiritualist, The Spanish Butcher and Paesano, Glasgow’s most popular pizza place. Ox and Finch also own a unit on the street and have been undertaking preparatory work in recent months on what could be another future restaurant.
I first looked at plans for El Santo last year at the Glasgow offices of Worq Group. Director Jonathan Doherty’s dog Santo, the inspiration for the name of the prospective food concept, was sitting on my foot at the time.

The family-owned hospitality business was in the process of renovating Virginia House to create the boutique Revolver Hotel which opened its doors over the summer. You will be able to see the entrance to the speakeasy bar from the first floor lounge in the hotel – the elegant cocktail experience will have its own entrance on Virginia Place.
Booking for El Santo, from 5 December onwards, is now open as the final version of the menu is approved, presented by their new Brazilian chef.
