Lockdown Bakes: Chef John Traynor’s lemon drizzle cake recipe

Undercover Dinner Society is an experience devised by award winning chef John Traynor. He aims to bring people together for good food in relaxed surroundings.


The menus are playful, featuring interesting flavors from around the world, using outstanding produce from Scotland. 

It will return after lockdown. In the meantime, here’s a simple cake recipe to try at home.



175g of soft unsalted butter

175g of caster sugar

3 medium free range eggs

175g of self raising flour

The  juice and zest of one lemon

Sugar drizzle

50g of caster sugar, the juice and zest of one large lemon


Preheat the oven to 180 degrees Celsius. Beat the butter and sugar together until pale in colour and light and fluffy. 

Beat in the eggs, one at a time and gently fold in the flour. 

Stir in the lemon zest and juice. 

Spoon the mixture into your loaf tin and bake on the middle shelf of the oven for 40 to 45 minutes, until golden brown. 

For the lemon drizzle topping, warm the caster sugar with the lemon juice and zest until the sugar has completely dissolved. 

When the cake is still warm, prick the cake all over with a toothpick and pour the syrup over the cake whilst it is still in the tin, let it to soak in before you serve it.
