We know chef Nico Simeone from the excellent 111 by Nico in Kelvinside which combines fine dining with a training academy, recruiting aspiring chefs who have had a poor start in life. It’s an important restaurant for the city.
Nico worked at Number One in Edinburgh and Glasgow’s Brian Maule. His restaurant creates the highest standard of cuisine while offering a route to employment for young people who may not have had many opportunities put in their path. His first student, Modou Diagme, is now Head Chef at 111 by Nico and works to train other students at the academy.
Their new project is a concept eatery that will open in Finnieston later this month.
Nico announced: “My next challenge takes the team and I on an adventure the best possible way we know how. Instead of creating a restaurant, we are creating a story.”
Six by Nico will have an evolving menu focusing on particular types of international cuisine. Think of it as a series of fine dining pop up restaurants that change every six weeks.
New flavours are coming to 1132 Argyle Street. We’ll be following this story in the lead up to the opening.
