Lorna McNee joined Restaurant Andrew Fairlie at the Gleneagles Hotel as an apprentice in October 2008. She rose through the ranks, supported by Andrew and head chef Stevie McLaughlin. Now, having spent 12 years in the kitchen at Scotland’s only two Michelin star, she is set to take over at “one of the city’s independent fine-dining restaurants” as head chef.
We don’t know where yet. Cate Devine knows but she’s not allowed to say. You can read her scene-setting interview with Lorna here.
Lorna tells us she has been “very busy menu planning, re-organising the kitchen and getting everything else ready for what is to come”.
She also says she has agreed with the restaurant to not release any further details until closer to their debut. The launch date is in the diary for 5th August.
She is trialling dishes.
This laminated brioche will be a side to a dish on the new menu.
Lorna sent us an email to say she’d talk to us about the restaurant later next month once they are up in running.
So, for now, we know it’s an existing restaurant and we know they are about to return to the local food scene with a very talented chef in the kitchen alongside a whole new team. And now you know too.
After four months of isolation, a bit of kitchen intrigue and restaurant gossip is long overdue.
We will find out more next week and be able to give Lorna a warm welcome to the city.
