Yakitori Shack officially launches next week with selected locally-sourced ingredients set to be enlivened by methodical barbecue cooking over binchōtan charcoal from Japan. The new enterprise comes from the people behind Ramen Dayo and takes up weekend residency in the space that is used by Park Lane Market every second weekend. Making an eye-catching debut with paper lanterns, bamboo and stylised signs, the shack’s arrival will have you wondering whether you are in Shawlands or Shinjuku.
Yakitori style cooking grills meat and vegetables over a traditional Japanese robata, over hot charcoal on a wide and flat open fireplace, similar to barbecuing. The skewers are then served fresh off the coals, flavoured by heat and smoke.

Chicken skewers on the Yakitori Shack menu, dipped in their signature tare soy sauce, will include momo (thigh), negima (thigh and leek) or kawa (crispy chicken skin). There will be tebasaki chicken wings alongside skewers of asparagus wrapped in bacon. Look to the moriawase chef specials board for what’s good on the day.
The Southside spot is a spin-off from Ramen Dayo, founded in 2016 when Glasgow DJ Paul Beveridge returned from 12 years living in Tokyo. He decided to recreate the noodle broth tastes of Japan’s capital and spent three years studying to be a ramen chef in his Glasgow tenement kitchen, creating many of the mixes and recipes that feature on the current menu. It all started with a hand-built yatai cart before Ramen Dayo found a permanent home on Ashton Lane.
The latest food adventure, Yakitori Shack is at Park Lane, 974 Pollokshaws Road, across from Queen’s Park and is open Fridays 5-8pm, Saturdays 1-8pm, Sundays 1-7pm.
