Best Dishes #12: Grilled Sea Bream in Brian Maule at Chardon d’Or

Brian Maule creates sophisticated and stylish French-influenced dishes in the award-winning surrounding of Chardon d’Or in the city centre. Expect the ultimate in fine dining and plenty of dazzling signature dishes.

The menu is designed around seasonal, locally sourced produce which makes it difficult to pick out a dish that will remain on the menu throughout the year. Right now, the star of the summer a la carte menu is a grilled sea bream, served with a delicate prawn and crab dumplings, coated with shellfish jus (£28). This is seafood elevated to an art form, a robust balance of rich flavours, beautifully presented.

Maule is a former head chef at le Gavroche and is well-respected in the industry, endorsed by Michel Roux Jr who says: “It is a delight to me to recommend someone who I have had the highest regard for twenty years. Our eleven years at le Gavroche showed me time and time again what he was capable of and it is a thrill to see these standards maintained at le Chardon D’or.”

Other summer favourites that are on the current menu include a spiced crab starter, served with tips of asparagus and shavings of parmesan (£10.25) and a main course of supreme of duck, with butternut squash, confit leg and potato croquette (£27)
