Healthy Halloween breakfast pumpkin spiced porridge recipe

Start your day tomorrow with a Halloween inspired healthy breakfast. You can also put use to any of the left over nuts and satsumas from trick or treat bags. The clocks have gone back and winter is creeping in, so embrace the flavours of the season with this quick, simple and tasty recipe.

PUMPKIN SPICED PORRIDGE

Serves 1

Porridge

40g porridge oats

250ml almond milk (or preferred milk)

25g coarsely grated pumpkin/squash/carrot

½ tsp cinnamon

¼ tsp ground ginger

¼ tsp all spice

1 tsp vanilla extract

To Top

Monkey nuts chopped

Sunflower seeds

Satsuma

Method

Place all the porridge ingredients in a small pot and give them a stir to combine. Place the pot on the hob over a medium heat and stir the mix throughout to avoid burning.

It will take around five minutes to cook through and thicken up.

If the porridge is feeling a little too thick, add an extra 50ml of milk or water to loosen and continue to heat.

Place the porridge in a bowl and top with your favourite nuts or chopped fruit.
